Quinoa Salad

Servings: 6-8

I often make this on Sunday afternoon and use it for lunches throughout the week. Note that the amounts can be played with- add more of what you like or omit ingredients. You can also skip the lemon & oil and substitute with balsamic dressing. Make it your own!

Quinoa Salad

Ingredients:

3 c. quinoa, cooked

8-10 Kalamata olives, chopped rough

1 c. cucumber chopped

1/3 c. red onion, chopped

1/2 c. parsley chopped

1 6 oz. container feta cheese crumbled

Chopped red, green, yellow, orange peppers (optional)

Garbanzo beans

2 lemons juiced

1/3 c. Olive oil 

Sesame seeds (optional)

Salt & pepper to taste

Steps: Cook the Quinoa and place in large bowl. Add all remaining ingredients and combine. You're finished...easy peezy!",
