Sarah's GF Jalepeno Chicken

In our family we always try to keep our Dairy free and Gluten Free members in mind! This is our sweet Sarah's favorite dish.
Ingredients:
1 TBS olive oil
1 -8 oz block cream cheese, softened
1 tsp mince garlic
1 tsp onion powder
1 tsp garlic powder
Salt & Pepper to taste
Chopped Jalapeno peppers,seeded x 1-2 (depending on your likeness)
1/3 c. Parmesan cheese
1/2 c. Shredded Cheddar cheese
Steps:
Preheat oven to 400 degrees. Place the chicken breasts in a single layer in a large baking dish. Brush on both sides (turning once) evenly with the melted butter or olive oil. Bake for 15-18* minutes, or until the chicken is cooked through and no longer pink. Cooking time will depend on the thickness of the chicken breasts, so I recommend using a cooking thermometer to know exactly when the chicken is fully cooked. The thickest part of the breast should measure 165°F.
While chicken is in the oven, chop Jalapeno peppers and **wash hands afterwards
In small saute pan, add olive oil, jalapeno peppers and minced garlic. Med-low heat until peppers are soft.
Add the cream cheese and reduce heat to low for 5-10 min. ,stirring occasionally.
Add spices and mix well.
Sprinkle Parmesan over top and let it melt.
Remove from heat.
Once chicken is done, top it with the cream cheese mixture and shredded cheddar, Bake additional 5 min.
Sarah says the cream cheese mixture can double as a YUMMY dip!
