Tex-Mex Pizza

This is a fast and fresh Pizza with vegetarian option.

Tex-Mex Pizza


Ingredients:

4-6 inch corn tortillas

4 tsp olive oil

1 small red onion, chopped 

1 jalapeno pepper, seeded and finely chopped

1 clove garlic, minced

1 cup canned black beans, drained and rinsed

1 cup seseded, chopped tomato

1 c. shredded monterey jack, mozzarella or cheddar cheese

2 TBS chopped cilantro

Steps:

Preheat oven to 425°F. 

Heat oven and lightly brush both sides of the tortillas with 1 tsp of olive oil and place on an ungreased bakingsheet.

Bake about 3 in. pr side until crisp and lightly browned.

Meanwhile in a large skillet, heat 3 tsp oil over medium-high heat. 

Add onion, garlic and jalapeno.

Cook until onion is tender. Stir in black beans and tomato; heat through.

Sprinkle tortillas with half of the cheese and top with bean mixture.

Sprinkle evenly with remaining cheese.  

Bake 4 min. or until cheese is melted and sprinkle with cilantro.
