Tony's Sausage & Peppers🌶

My Brother-in-law is an amazing Italian cook, and this is one of his signature dishes.
Ingredients:
1 1/2 lbs. Italian sausage (mild or hot)
*cut sausage on bias- easier if partially frozen- about 1 1/2" pieces
1 green pepper (cut julienne style)
1 onion, sliced & halved
2 TBS water or red wine
1 TBS tomato paste
Olive Oil
Salt & Pepper
**optional for heartier meal: add cut up potatoes
Steps:
Set oven to 375 degrees. In a bowl, add onion, peppers plus Salt & Pepper. Drizzle olive oil over the top and toss so that ingredients are coated evenly. Mix in all of the seasonings. Add about 1 TBS Olive oil to a large sautee pan. Cook the onion and peppers only until al dente. Just before done, add wine or water to tomato paste and stir. Put sausage in a glass baking dish- cover with foil and bake 40 min. Remove the foil and add peppers & onion mixture in the pan. Bake uncovered for another 10-15 min. to brown the sausage. This can be made ahead and put in crock pot to keep warm.
