This recipe was inspired by a local Fish House. It turned out really good at home! You can really make this your own according to what toppings you like. Jalepeno peppers, red onion, cilantro, etc...

This can easily become a Main dish by adding a protein, like chicken. A great side to bring to a backyard-barbeque, or pack for work lunch, since it can be served at room temperature.
I often make this on Sunday afternoon and use it for lunches throughout the week. Note that the amounts can be played with- add more of what you like or omit ingredients. You can also skip the lemon & oil and substitute with balsamic dressing. Make it your own!
