Marian's Fettucini
A family inspired recipe!
INGREDIENTS
WHITE SAUCE :
5 1/2 TBS butter or margarine
5 1/2 TBS flour
1/2 tsp salt
4 c. whole milk
FETTUCINI:
3/4 lb. grated Parmesan cheese
8 oz. sour cream
1 lb. Fettucini noodles
Garlic powder (to taste)
Steps:
WHITE SAUCE:
Melt butter in a small saucepan.
Add flour WHILE stirring with a whisk. **Very Important to use a whisk to prevent lumps
Bring to a medium paste consistency and stir in the salt.
Remove from the heat.
Heat milk in a larger saucepan being careful not to let it boil over.
As the milk begins to boil, add butter, flour & salt mixture (this is a called a roux) WHILE stirring.
Bring this mixture to a boil and remove from heat.
FETTUCINI:
Cook Fettucini noodles per package instructions.
Butter a large casserole dish using about 1/2 TBS of butter.
Drain noodles and put them into casserole dish.
Add sour cream, Parmesan cheese and garlic powder.
Add all of the white sauce and mix well.
Taste for appropriate sal and garlic content- adjust if necessary.
Spread 1/4 lb. grated Parmesan cheese and 2 TBS of cut up butter on the top.
TO SERVE IMMEDIATELY: Cover casserole and bake at 375 degrees for approximately 35-45 min. - until top turns golden brown.
TO SERVE THE NEXT DAY: Refrigerate immediately uncovered. Cover at least 1 hr. later. When ready to heat, put in the oven at 350 degrees for 75 min. to 90 min. - until top turns golden brown.
